Instead of using an "Out of Stock" can I use "Call to Reserve"

    I have a website running with TB, and I would like to ask for help if someone can provide a customization for “Call to Reserve” instead of using “Out of Stock” I disabled the cart so every visitors or customers is required to call our Toll Free Number and get their records prepared in our In-House CRM system, and all conversation and orders or reservation of Items are being voice recorded, black and white documented using email, We would just like to Increase our Customer Relation with this strategy.
