Where do i edit the form e.g. remove the date of birth and some address line?

Hi, go to localization > countries and click on edit button, you can change some things there for address format.

Other things can be done by edit identity.tpl and authentication.tpl on your themes folder (e.g. to get rid of the date of birth)
