When I first set up the site, I had the tax turned off. 
I guess that defaulted no tax on every single item I added, and now they won't ring up with tax unless I manually change each and every item. 

Is there some default way to reset the tax setting on all products listed? Basically have every product taxable again?

Ah ok. misunderstood.
as far as i know not possible in the system itself.

optional:
1. import via csv -> example article number and tax ID (or so)
or
2. change with prestools

I guess the answer is simple. Different taxes, different countries. Different taxes in one country.
For example in Germany 19% and 7%. How should the shop system recognize which tax rate should be used?

Installed it, followed the directions, and = nothing in my menus....

Let me correct that. Installed. But doesn't seem to be a default setting to mark all items with tax? 
AND, when I do one - it shows the total WITH tax before checkout. I'd like it to show it with taxes only at checkout on it's own line.
